Baked Fish in Coconut Curry Sauce

How to make it
Cook carrot in boiling water until tender.  Drain.
Pan-fry fish fillet in 2-3 Tbsp. oil until golden yellow and done.
Arrange carrot and fish on a baking dish.  Pour on sauce mix. Sprinkle with desiccated coconut.  Bake at 190C/375F hot oven until golden yellow.
