How to make it

  1. Cut the avocado in half, removing the pit. Scoop it into a bowl along with the greek yogurt and lemon juice, salt and pepper. Mash together well. 
  2. Toast the bread slices and then spread the avocado mash onto both halves. Sprinkle a little cayenne pepper followed by cucumber ribbons and smoked salmon. 
  3. Drizzle with Lee Kum Kee Panda Brand Dipping Soy Sauce and then finish with a little bit of watercress or pea shoots. Serve right away while nice and fresh.
