How to make it
Add the cucumber, red onion, and red bell pepper to a large bowl.
In a small bowl, whisk together the rice wine vinegar, honey, Lee Kum Kee Pure Sesame Oil, and salt.
Pour the dressing over the bowl with the cucumbers. Gently toss the vegetables together with the dressing until evenly coated.
Place the salad in the fridge for at least 1-2 hours to let the flavors marinate.
When ready to serve, top with chopped peanuts, and cilantro leaves.
