The spicy, tangy, and delicious flavors of al pastor get a cheesy and crispy twist with this al pastor egg rolls recipe.

 

Made with a ground pork infused with the flavors of al pastor, this recipe relies on a blend of chili ingredients to add the complexity and balance of heat that al pastor is celebrated for. In this case, to keep things simple, a blend of ancho chili powder and Lee Kum Kee Chili Garlic Sauce serve as the spicy flavor base to the al pastor seasoning blend for the pork. 

 

Cooked, rolled together with Oaxaca or mozzarella cheese, and fried to golden brown perfection, a third chili ingredient then enters the chat in the form of Lee Kum Kee Cilantro Lime Flavored Sriracha Sauce. This vibrant and tangy chili sauce makes for the perfect dip alongside these al pastor egg rolls, especially with added freshness from garnishes of pineapple and cilantro leaves. This will be a winner of an appetizer for any upcoming parties or gameday celebrations you may have!

How to make it

  1. In a large bowl, combine the ground pork, Lee Kum Kee Chili Garlic Sauce, pineapple juice, achiote paste, tomato paste, ground ancho chile powder, smoked paprika, cumin, and salt. Mix until evenly combined and let marinate for 20 minutes.
  2. Heat a large skillet over medium-high heat. Add the marinated pork mixture and cook for 6 to 8 minutes, breaking it apart with a spoon, until browned and caramelized. Let cool slightly.

  3. Place an egg roll wrapper on a work surface. Add about 2 tablespoons of the al pastor mixture and 2 tablespoons of cheese to the center. Brush the edges with egg wash, fold tightly, and roll to seal. Repeat with the remaining wrappers.

  4. Heat 2 inches of oil in a deep skillet or Dutch oven to 350°F. Fry the egg rolls in batches for 3 to 4 minutes, turning occasionally, until golden brown and crispy. Transfer to a paper towel-lined plate.
  5. Garnish with diced pineapple and cilantro. Serve hot with Lee Kum Kee Cilantro Lime Flavored Sriracha Sauce for dipping.
