How to make it

  1. Pound the shrimp with the back of a knife blade, then dice.
  2. Stir together all the ingredients and seasonings (except the siu mai wraps) for one minute to mix. Then refrigerate for 30 minutes.
  3. Place the filling in the middle of the wrappers and wrap the sides. Press against the top of the filling with a spoon to flatten.
  4. Steam for 10 minutes over high heat.
